Western Sandwich
5 Min

This hearty omelet recipe was an Old West favorite that today makes a perfect light lunch served up on a platter or as a sandwich filling. Either way, the diced ham and veggies make for a tasty combo!

What You'll Need:
  • 2 eggs
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup diced ham (2 slices)
  • 2 tablespoons chopped onion
  • 2 tablespoons chopped green bell pepper
  • 1 tablespoon butter
  • 2 slices bread
What To Do:
  1. In a small bowl, combine eggs, salt, and black pepper; mix well. Stir in ham, onion, and bell pepper; mix well.
  2. In a small skillet, melt butter over medium heat. Add egg mixture, and cook 2 to 3 minutes, or until eggs are set.
  3. Using a spatula, flip eggs then cook an additional 2 to 3 minutes, or until set. Serve between bread slices.
