Despite its unusual name, this is one salad you aren't going to want to throw away! That's 'cause our Garbage Salad is LOADED with a ton of veggies, cheese, and deli-style salami.

What You'll Need

  • 1 head iceberg lettuce
  • 1 head romaine lettuce
  • 2 tomatoes, cut into chunks
  • 6 (1-ounce) slices provolone cheese, cut into strips
  • 6 ounces Genoa salami, cut into strips
  • 1 (14-ounce) can hearts of palm, drained and cut
  • 1 (14-ounce) can artichoke hearts, drained and quartered
  • 1 (7-ounce) jar roasted red peppers, drained and cut into strips
  • 1 (5.75-ounce) can large pitted black olives, drained
  • 1 (16-ounce) jar peperoncini, drained
  • 2 1/2 cups prepared vinaigrette dressing

What to Do

  1. Wash and dry lettuce and tomatoes then cut into bite-sized pieces. Place in a very large mixing bowl with remaining ingredients except dressing; toss to mix well.
  2. Pour desired amount of dressing over salad; toss to coat. Serve immediately.

I understand the concept for the name but come on. Let's step back and think about it. Would you like for your host to tell you that you are being served garbage salad? Maybe, everything but the kitchen sink would imply a lot of ingredients.

Yummy looking salad. The only item that I would omit would be the olives. They are just a little too salty for me, but I guess in this salad they would have their place. So I guess, first time around, I will leave them in. I can always move them to the side. Thanks for the yummy salad with a not so yummy name.

An Iceberg lettuce and a Romaine seem redundant to me .Perhaps an Iceberg lettuce and a frisee would be more interesting.

To me, it's more of an Italian salad, not GARBAGE - BECAUSE, you're not using left overs that you may find in the fridge......

The perfect salad!

I make a very similar "salad" using pasta instead of the lettuces. Travels well for picnics.

Pepperoncini are spicy pickled salad peppers. They are available at Kroger and most other grocery stores in the aisle with the regular pickles. Hope that helps.

What is peperoncini, and where do I find it? I don't think I've ever seen it at Kroger's, and they are about the most exotic food store around except for the Asian Grocery that opened up last year. Somehow I don't think it would be found there. It sounds too Italian. Any help there?

Hi Dendy! You can find pepperoncini near the pickles in the grocery store. Most grocery stores should carry them, but we always recommend calling ahead to be sure!

I have been making this exact salad for quite sometime now. It's great to take to a potluck and much quicker than rolling/cuttin/prepping all the ingredients for beautiful platters. However, for fancier occasions, I will still do the antipasto platter. Use your own homemade Italian or vinaigrette dressing for an even fresher flavor!

Salad designer should have a more distinguished name than "garbage" for this creation because the ingredients are carefully chosen and almost resemble an antipasto.

When I copied this recipe, I re-named it ANTIPASTO SALAD.
