The pineapple has always been a welcoming symbol. Our pineapple-packed Pina Colada Trifle is sure to be a welcome and novel dessert, making it one of the best potluck dishes around!

What You'll Need

  • 2 cups milk
  • 1 (4-serving size) package vanilla instant pudding mix
  • 1 (8-ounce) container frozen whipped topping, thawed
  • 1 (9-inch) round angel food cake, cut into 1-inch cubes
  • 1 (20-ounce) can pineapple tidbits, drained
  • 1 cup toasted coconut
  • 8 maraschino cherries

What to Do

  1. In a medium bowl, combine milk and pudding mix. Using a wire whisk, beat 30 seconds then let stand 2 minutes, or until thickened. Fold in whipped topping.
  2. In a trifle dish or glass bowl, layer half each of cake cubes, pudding, pineapple, and coconut. Repeat layers and top with cherries. Cover and chill 1 hour.


  • To toast shredded coconut, spread it on a rimmed baking sheet and bake in a preheated 350 degree oven 3 to 5 minutes, or until golden. Watch carefully so it won't burn.
  • If you prefer, you can make these in individual dessert dishes. And if you'd like even more of an "adults only" pina colada flavor, you can drizzle rum over the cake cubes before layering.

Oh this looks like a "need to make for Easter dinner" dessert. I can use lo fat and sugar free to make healthier but still yummy.

I made this last night. Oh.. it was out of this world good! foud a new holiday dessert.YUM

I roast the coconut in a small pan on the stove.

I have made many triffles and have always used pound cake. I think using that would be better than the angel food cake which tends to be too sweet for me.

Can you buy toasted coconut or do you have to toast it yourself like in the oven or something?

The picture appears to have some caramel sauce throughout. Sounds good!

As yummy as that sounds, there is no caramel sauce in this recipe. I think you may be seeing the darker pieces of the angel food cake or the toasted coconut. Thank you and enjoy!

I have made this many times with sugar free pudding+ light cool whip. I aLSOo topped with fresh Strawberries + shaved dark choc. on top. SOOO Yummy+EASY TO MAKE!

It looks like it would be easy to use sugar free angel food cake as well, for those of us trying to cut the carbs and sugar. It does look very good!

This trifle is delicious! It looks impressive, but it's very simple to make. Everyone I've made it for always wants the recipe.

I used 1 cup milk and 1 cup coconut cream(Lopez coconut cream)mix well then add vanilla instant pudding. gives it a more creamy silky texture and adds more of a coconut flavor. I like the idea of the rum so I drizzled the tops with coconut white rum. yummy

I used sugar free pudding, skim milk & lite whipped topping and it still delicious with less calories & fat!
