Greek Pasta Salad

Take your taste buds to the Greek Isles without leaving home by tossing together the flavorful ingredients to make our Greek Pasta Salad. This Mediterranean-inspired Greek pasta salad recipe can be on your table as a change-of-pace go-along or light main dish that's perfect for hot summer days. This Greek pasta salad has feta, tomatoes, spinach, and all kinds of Mediterranean flavors that will have your taste buds saying "Opa!" 

What You'll Need:
  • 1 (12- to 16-ounce) box radiatore or ruffles pasta
  • 1 (10-ounce) bag fresh spinach, rinsed, drained and coarsely chopped
  • 1/2 pound (8 ounces) feta cheese, crumbled
  • 1 pint cherry tomatoes, sliced in half
  • 1/2 cup pitted Kalamata olives, drained
  • 1 cup bottled Greek dressing
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
What To Do:
  1. Cook pasta according to package directions; drain, rinse, then drain again.
     
  2. Meanwhile, in a large bowl, combine remaining ingredients; add pasta and toss gently until evenly coated. Serve, or refrigerate until ready to serve.
Notes

I like to add just a bit more spinach to this pasta salad to balance out the amount of pasta. Cubed grilled chicken in this is great in it, as I sometimes like to make a quick pasta salad for dinner on a busy weeknight. Crumbled cooked bacon would taste great in it for a different twist, and your favorite Caesar dressing could be substituted for the greek if that is what you have on hand. I love using the radiatore pasta in salads since they hold the dressing really well.

Very good! I used 16 oz pasta but I will use the lesser amount next time as it almost over-powered the other ingredients. I do not care for kalamata olives so I substituted with black olives. The dressing was the wonderful accent that pulled everything together. I served this with rotisserie chicken and French bread. I will definitely make this salad again!

I served this pasta on memorial day weekend with marinated chicken wings and shrimp kabobs. What a hit. I had to give it to 3 of my 8 guests! Made my party a success

I served this along with some French Dip sandwiches to company and they all raved about dinner, especially the wonderful salad.

Toss some chunks of cucumber in there too!

This is a salad I would like...not hubby though.
