Fast Taco Pie is a quick and savory pie full of all the flavors kids of all ages love for dinner. If you've been looking for the ultimate ground beef skillet recipe, then you've come to the right place! With a tasty mix of Mexican flavors and good, hearty ingredients including lettuce, tomatoes, cheese, and ground beef, you're in for a dinner to remember with this one!
What You'll Need
- 1 pound lean ground beef
- 1 (16-ounce) can refried beans
- 1 cup salsa
- 2 cups shredded iceberg lettuce
- 2 large tomatoes, chopped
- 1 cup (4 ounces) shredded Cheddar cheese
- 1/2 cup sour cream
What to Do
- In a large nonstick skillet over medium-high heat, cook beef 6 to 7 minutes or until browned, stirring frequently; drain off excess liquid.
- Stir in refried beans and salsa, breaking up mixture with the back of a spoon. Bring to a boil, reduce heat to low, and simmer 5 minutes, or until well combined and heated through, stirring frequently. Remove skillet from heat, scrape down sides with a spatula, and smooth mixture evenly in skillet.
- Arrange lettuce, tomatoes, cheese, and sour cream in concentric circles (one inside the next) on top of beef mixture, and serve immediately.
Notes
- If you prefer, remove the beef mixture to a platter then layer with the lettuce, tomatoes, cheese, and sour cream. And don't forget the tortilla chips!

So very good and easy. My hubby wasn't sure he'd like the refried beans but after eatting it said this was a keeper. My son is a vegetarian so I made his using Boca crumbles and he liked it too.

I have leftover rotisserie chicken that I will shred, season and use in place of ground beef. Also will add fresh Anaheim chilies (what is used for canned green chilies) and use what has been recommended here, crushed tortillas on bottom. But plan to follow the rest of the recipe but adding some additional spice. I also have jalapenos both in my refried beans (super good) and fresh from the garden. Penzey's has a good taco seasoning, the bold is particularly good. I only use it never the packaged. It is going to be very good, I know.

I like the idea of laying down broken Fritos or Doritos and then finish with the recipe. The Fritos or Doritos will be crunchy when first serving it. However, if you have any leftovers, they may become too soft or mushy. If they do, I think it will still taste good. If you have trouble with "gas" from the beans, just add a little Ginger with them. That will help the problem and not alter the taste. Can't wait to try it.

Crumble some chips on you plate then put your serving of pie on top of them to maintain crispness and not have soggy chips in any leftovers.

This was very good. I used fat-free refried beans and reduced fat mexican cheese blend and fat free sour cream as I have to watch fat and carbs. This recipe makes a lot.

OK, Also, if ya like Mexican type food, you ar gonna get small portions using this guide! I would at least double the ingredients if not quadruple them! ( I guess I love Mexican food! )

When I make this, I get a 13x9x2 glass baking dish and crush up a bag of doritos and layer it in the bottom, then I put the cooked ground beef on top and the rest of the layers....... the crunch really sets it off.... most delish!

Looks like a great recipe, but the hamburger definitely will need some added flavor. Having lived in Las Vegas for almost 12 years, we find adding pork Chorizo (Mexican style sausage you can purchase at Walmart) definitely gives the hamburger a more authentic taste and kick. Living in a rural PA area now, REAL authentic mexican foods are so hard to find! Besides making our own mexican dishes, Taco Bell is the closest lol...

I completely agree, I have been using pork Chorizo for years, and I can not stand that package sesoning, but by just putting refried beans to a dish does not make it mexican, and how can you eat anything from Taco Bell LOL

We actually found an "authentic mexican" restaurant about 20 miles away and the drinks were awesome! But when it came to the food, what a shame. I had a beef quesadilla and it was nothing more than plain cooked hamburg, no seasonings at all and the cheese when it melted was so watery! It was absolutely horrible! My husband had a fajita that lacked flavor also. We never went back! Thats why we say that besides our cooking, Taco Bell is the closest..lol..Since I wrote my first comment, we have found a real mexican restaurant 2 hours away that is awesome! If you get the chance check out La Tolteca in Clarks Summit, PA! The decor is so festive, beautiful colors and fun!

I have friends that never lived in NM as we did so they do not like Green chilies. This does sometimes make things a bit bitter. As someone suggested they added some. Also have a friend that doesn't tolerate beans. Sooooo, I only use half the recipe beans. Picky friends....but when I make it for hubby and I I go by the above recipe

An elderly lady, who was an excellent cook, once told me to always add a little Ginger to anything that contained beans (except green beans). I do this my chili. About 1 tsp. So, we never have any intestinal problems...if you know what I mean! LOL
