Everybody loves macaroni and cheese but Curly Cheddar Bake is one with a difference!

What You'll Need:
  • 1 pound rotini pasta
  • 4 cups shredded sharp Cheddar cheese, divided
  • 1/2 cup (1 stick) butter or margarine
  • 1/2 cup grated Parmesan cheese
  • 6 eggs
  • 2 (13-ounce) cans evaporated milk
  • 1/2 teaspoon mustard powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
What To Do:
  1. Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking dish with cooking spray.
     
  2. Cook macaroni according to package directions; drain well and place in a large bowl. Add 3-1/2 cups Cheddar cheese and stir until cheese is melted. Add butter, Parmesan cheese, and eggs; mix well. Add remaining ingredients. (The mixture will be fairly liquidy.)
     
  3. Pour mixture into prepared baking dish. Sprinkle with remaining 1/2 cup Cheddar cheese and bake 40 to 45 minutes, until center is set.
Note

This cheesy bake is just as good the day after it's made!

At first I was a bit wary of this recipe, since it calls for so much butter and 6 eggs - I thought it would turn out like some kind of noodly quiche. But after making it I understood why since it makes a very large batch. If you didn't have any mustard powder, you could just use your favorite mustard for this - I used the spicy brown variety. It was very good! Next time I make it I might add some broccoli florets and diced ham to make it a full meal rather than as a side dish.

What is mustard powder in this recipe? I have never used it or heard of it.

Look for it in your spice isle.

This is a very good recipe. However, I added onion and sweet red & orange peppers sauted in extra virgin olive oil to give color and more more flavor. I also added extra virgin olive oil to the pasta and the baking dish instead of using cooking spray. We had this for our family gathering on Easter Sunday and the gang loved it.
