What You'll Need

  • 1 (16-ounce) package elbow macaroni
  • 1/2 stick (1/4 cup) butter
  • 1/4 cup all-purpose flour
  • 3 cups milk
  • 1 (8-ounce) package cream cheese, cut into chunks
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 (8-ounce) block extra sharp cheddar cheese, shredded, divided
  • 1 (8-ounce) block smoked Gouda cheese, shredded, divided
  • 1 (4-ounce) wedge Parmesan cheese, shredded

Smoked Mac and Cheese Instructions

  1. Cook pasta according to package directions. Drain well.
  2. Meanwhile, in a medium saucepan, melt butter; whisk flour into butter and cook over medium heat 2 minutes. Whisk in milk and bring to a boil; remove from heat. Stir in cream cheese, salt, and pepper until mixture is smooth.
  3. Preheat oven to 300 degrees F. (See tip on smoking.) Coat a disposable 9-1/2- x 11- x 2-inch aluminum roasting pan with cooking spray. (We like using an aluminum pan here in case you want to put this in your outdoor smoker, otherwise a 9- x13-inch baking dish will be fine.)
  4. In a large bowl, combine 2 cups cheddar, 2 cups smoked Gouda cheese, the Parmesan cheese, pasta, and sauce.
  5. Spoon mixture into roasting pan. Cover with aluminum foil and bake (or smoke) 45 minutes. Uncover, sprinkle with remaining cheese, and bake 15 to 20 more minutes or until heated through.

Test Kitchen Tip

  • Although the cheese will give this a natural smoky flavor, you can make this extra yummy by placing this in your smoker and smoking it for 45 minutes to an hour at 225 degrees, until brown, bubbly, and delicious.

can you make this ahead freeze it ?

Hi there! Yes you can freeze the mac and cheese then bake off at a later time. Just make sure to thaw completely before cooking. Hope this was helpful!

I have made this recipe several times and it's always a hit at our parties. I'm going to be making this for my son's graduation party on the 16th of June. Have you ever made this in advance and frozen it? And then put it in a roaster to reheat? I could make it the day before and put it in the refrigerator.

Have made this three times in many weeks. It's an easy recipe and Delicious. I found that name brand Philadelphia Cream Cheese and Land of Lakes Butter enhanced the taste significantly over off or other brands.

I had never thought of using a smoker with cooking macaroni and cheese. We have a smoker, but since we're moving into winter, it's pretty much been put up for the season. This will definitely get a trial next spring as we break out the grill, but for now I'm very tempted to try this recipe for mac and cheese using smoked Gouda and smoked cheddar. This would be a great addition to grilled steaks or burgers.

Can this be prepared ahead of time and then placed on the smoker?

I thought that homemade macaroni and cheese was awesome and couldn't be improved on. I was wrong! This is a very rich, flavorful, truly grown up version of the classic comfort food. The combination of cheeses is so flavorful, and the smokiness is a great match. The recipe makes a ton, but it will all get eaten! The perfect side dish for summer grilling season.
