Drive your gang wild by serving 'em the creamiest, cheesiest, and most flavorful whipped potatoes they've ever eaten. Our Drive 'Em Wild Potatoes combine some of the tastiest ingredients out there to create the ultimate side dish recipe. They're perfect alongside any of your favorite main dishes!

What You'll Need

  • 3 cups warmed mashed potatoes
  • 2 cups shredded mozzarella cheese, divided
  • 1/2 cup sour cream
  • 2 tablespoons real bacon bits
  • 2 tablespoons sliced fresh chives, divided
  • 1/4 teaspoon black pepper

What to Do

  1. Preheat oven to 375 degrees F. Coat a 2-quart casserole dish with cooking spray.
  2. In a large bowl, combine the mashed potatoes, 1-1/2 cups mozzarella cheese, sour cream, bacon bits, 1 tablespoon chives, and pepper; mix well. Spoon into the casserole dish and top with the remaining mozzarella cheese.
  3. Bake 30 to 35 minutes, or until heated through and the cheese is golden. Sprinkle with the remaining chives and serve.

Notes

Feel free to use either instant of homemade mashed potatoes, whatever works for you!

Can I freeze fully cooked casseroles, such as mashed potatoes, sweet potatoes, or green bean casserole for use on Christmas day?

I used sharp cheddar and also white sharp cheddar cheese. This added more flavor.

Use sharp cheddar, mozzarella has no taste, not sure why its used anywhere!

My family will love this potato recipe. We love mashed potatoes to start with, then when you make them creamier and add cheese and bacon? It's almost a meal by itself. This dish will be a huge hit. I might make this with my Easter ham, or save it for a later date.

Not a fan, went strictly by the recipe using real potatoes. Too bland. Would spice it up next time.

I make this when I have extra homemade mashed potatoes left over I use shredded sharp cheddar cheese and fry up real bacon,cut it up and add to the potatoes no chives, onions or sour cream but of course you can add it if you like to make it even dressier... true comfort foodI have also made this using instant mashed potatoes both are delicious

I make this frequently, using whatever cheese I have on hand. Great make ahead dish and nobody guesses I used instant potatoes.

I assume you can use real mashed potatoes (warmed), also mix together ahead of time and then bake when ready to use

Of course you can. If you wanted to, you could even make them from scratch. Our method - or yours will just save you time. Thank you for your question!
