Sweet Potato Pancakes

A platter of crispy sweet potato pancakes is always welcome for holiday entertaining. This healthy pancake recipe is our twist on the spuds, making great use of sweet potatoes as a tasty alternative. We especially love this recipe as the weather starts to get chilly, but don't be afraid to make these tasty bites any time of the year!

What You'll Need

  • 1 1/2 pounds sweet potatoes, peeled and shredded
  • 1 small onion, finely chopped
  • 1 egg, beaten
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Vegetable oil for frying

What to Do

  1. In a large bowl, combine all ingredients except oil; mix well. Form into 12 pancakes.
     
  2. In a deep skillet, heat about 1/4 inch of oil over medium-high heat. Fry pancakes in batches 3 to 4 minutes per side, or until golden. (If you like them crisper, fry until they're flecked with brown.) Drain on a paper towel-lined platter and cover with foil. Repeat with remaining pancakes, and serve hot.

 

Notes

  • Wanna make these ahead of time? Just heat in a 350 degree F oven for 15 to 20 minutes or until heated through.

Why onions ????

Onions were added for flavor, but if you can leave them out if you prefer. :)

This was ahh mazing!

Sweet without adding maple syrup as a suggestion. do not make too big a pancake as it fell apart when I turned it over. I was afraid they would not hod together but did better when a smaller pancake and fried 3 minutes per side.

I'm definitely going to try and make these, I like sweet potatoes a lot!!

This looks so 'yummy' and coming from 'Mr. Food,' it certainly will be! I have a suggestion, although I haven't tried it (yet) but I have a friend who can't eat any kind of flour, so I'm going to try (gluten-free-flour) and see how it turns out. This may be a help to others who have 'gluten issues.' Wonderful recipes 'Mr. Food'! little ole' cook from Ohio good day to ya!

If you are making potato pancakes why not go for these? Awesome is what they are!! You can use butter, maple syrup even sour cream....but these are so good unadorned.

We love sweet tators, any tators, bout any way you fix 'em. This is a good old recipe!
