Texas Broccoli and Rice Casserole

Texas Broccoli and Rice Casserole

They say everything's bigger in Texas, which must be why this casserole is so big on taste! Our Texas Broccoli and Rice Casserole is creamy, cheesy, and oh-so-easy. It's perfect alongside anything from Texas brisket to your favorite chicken dinner!

What You'll Need:
  • 3/4 cup chopped celery
  • 1/2 cup finely chopped onion
  • 1/2 stick (1/4 cup) butter
  • 1 (12-ounce) package frozen chopped broccoli, thawed and drained
  • 1 (10-3/4-ounce) can cream of mushroom soup
  • 1 cup chicken broth
  • 1 cup (4 ounces) shredded cheddar cheese
  • 3 cups cooked rice
What To Do:
  1. Preheat oven to 350 degrees F. Coat a 1-1/2-quart baking dish with cooking spray.
     
  2. In a large skillet over medium-high heat, melt butter; saute celery and onion 3 to 5 minutes or until tender. Transfer to a large bowl.
     
  3. Mix in remaining ingredients then place the mixture in baking dish.
     
  4. Bake 40 to 45 minutes or until heated through and bubbly.

How much raw rice will make 3 cups cooked?

Lived in south Texas for years....a mainstay for my family. I did, however, use one regular size jar of Velveeta rather than the cheddar. It is a meal in itself.

Can this recipe made ahead of time and freeze till needed!

We have not tested freezing it, but it would probably work since the rice is already cooked. Good luck!

Is there any way to cut down on the amount of butter used? Would a little extra liquid work? An entire stick of butter is a lot.

Yes, indeed. Use only the amount of butter you need to successfully saute the celery and onions, maybe 2-4T. There should be no real problem in the overall recipe, just less fat.

I have used a similar recipe for years. I add cooked chicken, mushrooms, and sliced water chestnuts. I have never used chicken broth, just mushroom or chicken soup

This sounds good.. altho I would use velveeta american cheese in place of the cheddar. I have made a casserole similar to this one before.

How much velveeta would you use

This is the recipe my family has used for years - and it is perfect every time. Makes excellent leftovers - IF you have any!

I add some chopped chicken to this and make it a one dish dinner!!
