Buttery Squash

Remember how Grandma made us eat all our vegetables and clean our plates? Here's our way of showing her what a good job she did in teaching us to like veggies. (It's not only good for you, you're gonna love the taste, too!)

What You'll Need:
  • 1/4 cup (1/2 stick) butter
  • 8 medium yellow squash (about 2 pounds), sliced into 1/2-inch rounds
  • 1 medium onion, finely chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
What To Do:
  1. Melt the butter in a large skillet over high heat.

  2. Add the remaining ingredients and cook for 18 to 20 minutes, or until the vegetables are tender and the squash begins to brown, stirring frequently.


You can also make this simple vegetable side dish by using half zucchini and half yellow squash for a more colorful mix.

This doesn't apply to butternut squash. You have to peel it. When you roast it in the shell you can't eat the peel.

I like to ad a couple of srips of bacon, already cooked and crumbled just before serving so they don't get soggy.

This is good but add one clove of garlic and two fresh tomatoes chopped add a half of a cup cheese and bake about thirty min at 375. ENJOY !!

I also don't peel plus at the end of cooking I sprinkle grated Parm/Romano and cook until melted and starting to brown. Yummmmmm

It is not necessary to peel squash or qucchini. Hope this helps.

no recipe using squash ever states that the squash or zucchini needs to be pealed. do we take it that it doesent?

I love squash this way, but I add a little sugar (seems to enhance the flavors) and rather than finely chopping the onions I slice them. Also good with the addition of zucchini.

My local Kroger has a pack of rounds of zucchini, yellow squash and larger pieces of onion with a sprig of fresh dill. I like to saute fresh mushrooms in real butter, then warm up the other stuff with them. The last time I melted some shredded cheddar with it and it was very delightful.
