Hearty Squash Casserole

Hearty Squash Casserole

This is a side dish often found at Southern "supper gatherings." It's topped with lots of melted cheese, and it's bound to make squash lovers out of everyone!

What You'll Need

  • 2 eggs
  • 1 tablespoon sugar
  • 1 1/2 cups shredded sharp Cheddar cheese, divided
  • 1/2 cup mayonnaise
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pound yellow summer squash, cut into 1/4-inch slices
  • 1/4 cup plain bread crumbs

What to Do

  1. Preheat oven to 350 degrees F. Coat a 1-1/2-quart casserole dish with cooking spray; set aside.
     
  2. In a large bowl, with a fork, beat eggs and sugar until frothy. Add 1 cup cheese, the mayonnaise, salt, and pepper; mix well. Stir in squash and pour mixture into prepared casserole dish.
     
  3. Sprinkle with bread crumbs and bake 30 minutes. Remove from oven, top with remaining cheese, and bake 10 to 15 additional minutes, until heated through and cheese is golden.

Has anyone tried this recipe with acorn or butternut squash?

I made this a couple nights ago and it tasted delicious. I added chopped onion and bacon but left out the sugar. Thanks for the suggestion Dawn 5077626

I would not think the sugar is necessary here, but some chopped bacon and onions would be a perfect addition :)

This is a great recipe!! I don't know what has changed, but I'm unable to put recipes in folders. Anyone else having this problem?

We really enjoyed this. Left out the sugar but added chopped onions. No leftovers at all! Will definitely make again. Perfect side dish for a potluck.

I have tried this but without the sugar - very delicious!!!! Also you can use crackers on top - yummy! Never any leftovers!! Enjoy!!

If you left out the sugar because of blood sugar problems, you could replace it with STEVIA. It is 100% all natural, and will not raise your blood sugar. It is much stronger than regular sugar, so you definitely would not want to use the amount specified in this recipe. It is HEALTHY for you. Not like Splena or Equal, which is "poison" for your system.
