Homemade Microwave Pickles

Never made our Homemade Microwave Pickles? What are you waiting for?! The farmer's market is full of fresh cucumbers and we're not wasting any time turning them into our favorite homemade snack. With the help of the microwave, we can make pickles way faster than our grandmas ever could, and now we can have them homemade whenever we want!
What You'll Need
- 1 large cucumber, thinly sliced
- 1 medium onion, thinly sliced
- 3/4 cup sugar
- 1/2 cup white vinegar
- 1/2 teaspoon mustard seed
- 1/4 teaspoon celery seed
- 1/4 teaspoon turmeric
- 1 teaspoon salt
What to Do
- In a microwaveable 2-quart bowl, combine all ingredients; mix well.
- Microwave uncovered at 80% power 5 minutes, stirring halfway through. Allow pickles to cool.
- Cover and chill at least 2 hours before serving.

I make these all the time My family Loves them I also add my own different additions like carrots, jalopenos,bellpeppers just about anything you can pickle just throw in and cook with the rest )

I believe it was last year that my husband saw Mr. Food make this recipe on tv. I looked up the recipe and gave it a try. He loves these pickles. I made them so many times from my home grown pickles that I figured out how to can them. It now a staple in our family.

I wouldn't bother to can them because they will last for about 2 months in the coldest part of the fridge and they are so easy to make up as you need them, no waiting for them to cure.

I have made these for years and always get asked for the recipe. I cook them for 8 minutes because that is what the original recipe called for. My microwave is 1000 watts.

Our Homemade Microwave Pickles don't need to be canned because they are microwaved, which speeds up the process so that you don't have to can them. However, if you don't microwave them, and just can them, it would be all right. :)

Wow, these were the absolute best pickles I've made. My family couldn't believe these came out of the microwave! Love them. Sooooo quick and easy. They taste like bread and butter pickles. I've made bread and butter pickles before, and they're time consuming to cook on the stove. These are so quick and easy.

I'd say that, with the sugar, they'd be sweet. A quick search on the 'net showed other similar recipes with the description "bread and butter". Do a search for "microwave dill pickles" if you're wanting to make that. (which is what I'd prefer)

These were terrific & very easy to make. I'll make another batch later today, because we gobbled them up in one shot. I'll double the recipe, and since I have several English cukes....I'll use 'em this time. I will however, add some finely chopped garlic and a little bit of pickling spice. I used a 'mandolyn' to slice the cukes very thinly. Now I'm thinking that perhaps adding a little bit of fresh dill weed would be nice, too.

In order to cut down on the high amount of sugar called for in this recipe, I used Truvia, as my choice of an artificial sweetener because nearly all other artificial sweeteners (Splenda, Sweet-N-Lo, etc.) are very bad for one's health. I used 3-1/2 tbsps. of Truvia which equaled 1/2 cup of sugar and then used just 1 tbsp.. of regular sugar.

I used a pickling spice blend in place of the mustard and celery seed, because I wanted the cloves, cinnamon, etc flavor. They were delicious.
