My Favorite Tomato Salad

What's one of Mr. Food's favorite recipes? This simple Tomato Salad and homemade dressing that shouts "fresh from the garden." It's now our favorite, and we bet you'll be saying it's "My Favorite Tomato Salad" too.

What You'll Need:
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tablespoon sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 large beefsteak tomatoes, chunked
  • 1 large green bell pepper, chunked
  • 2 to 3 scallions (green onions), sliced
  • 1/4 cup chopped fresh basil
What To Do:
  1. In a large bowl, combine olive oil, vinegar, sugar, garlic powder, salt, and black pepper; mix well with a whisk.
     
  2. Stir in remaining ingredients and gently toss until evenly coated. Serve immediately, or cover and refrigerate until ready to serve.

Notes:

  • Tomatoes are at their tastiest when eaten at room temperature. If you're assembling this salad in advance and refrigerating, just let it sit out on the counter for 30 minutes or so before serving.
     
  • The best way to enjoy this down to the last drop? Some yummy bread for sopping up the dressing, of course!

When they are raw, the green bell peppers can sometimes have a bit of a bitter taste. I would use the yellow variety, since they seem to be much sweeter. I love to show off my homegrown tomatoes using simple fresh recipes like this one. I would use fresh garlic instead of the powdered, and let this sit in the fridge for a while, stirring occasionally. The sweet vinaigrette will take the bite out of the garlic, and the juice from the tomatoes will "marry" with the dressing. This is such a healthy side dish!

Why not try sliced red onion or even Vidalias?

so refreshing and lots of crunch with the bell peppers.

Try replacing the raw bell peppers with steamed (or canned) green beans.

I'm one who cannot eat bell peppers raw. I would substitute zucchini or cucumbers. Ann k

I like bell peppers, but husband does not. What is close i can use, and dont say Jalapenos!

I like it with yellow & orange peppers aswell give it some more color !!!!

Very Tasty! This salad quickly became a favorite during the summer months and I still make it from time to time in the winter also.
