I was so excited about this cake, because not only was it really easy to make but it was actually fun, too! The plus side about being the Test Kitchen chef is I get to try everything I create — and this happened to be one of the most delicious cakes I have ever tasted. It’s so light and refreshing, yet it tastes so decadent, like a million bucks. It may look difficult to make, but it isn’t — and you don’t have to be rich to make it!
First I slice my prepared cakes in half to make 4 layers.
I whip up the pineapple cream mixture and spread it on each layer like this.
Place each layer on top of one another, garnish with a few mandarin oranges, sprinkle with some chopped nuts.
There you have it, Millionaire’s Cake — can’t wait to dig in!!
