You really can teach an old dog new tricks! Okay, so I’m not THAT old, but over the last few years I’ve been teaching myself to like certain healthy foods I never liked before.
First it was sweet potatoes. Can you believe I never ate them growing up? Neither of my parents cared for them, so therefore I was never exposed to them. Several years ago, I started hearing about how healthy they were, and I was determined to learn to like them. I’ll admit…it wasn’t that difficult! Now, I love sweet potatoes…mashed, baked, fried and even shredded. I especially love the Mr. Food recipe for Two-Tone Shredded Potatoes (oh, and just for the record, my parents both love them now, too!)
One of my favorite trendy foods right now is kale. I never thought that I would love this dark and leafy vegetable, but once I learned that there are many easy kale recipes out there, I wanted to give it a chance. So, after a little self-convincing in the produce section, I decided to go ahead and make kale chips. I read that they were as good as potato chips, but I have to admit I was still VEEERRRRYYY skeptical. I bought a bag of pre-washed, pre-cut kale, dried it off a bit and tossed it with olive oil and kosher salt. Then, I spread the freshly seasoned kale on a baking sheet and let the greens toast at 275 degrees F for about 15 minutes. It’s that simple! I recommend eating this cooked kale recipe while it’s still fresh and crispy.
Since there are so many tasty ways to include kale in your cooking routine I gathered some of my favorite easy kale recipes from MrFood.com to share with you. So, whether you’re looking for a cooked kale recipe that stands out on its own or a kale salad recipe to bring along to your next potluck, there is plenty to go around.

I hope that you’ve found some new kale recipes to love just as much as I do. In fact, I now consider myself quite the kale fan; I bring my own kale salad to lunch every day. Now I want to know…
Which of these easy kale recipes do you like best?
