How to Make an Easy Ice Cream Cake

Ice cream. While we love this sweet treat all year long, there’s nothing like a scoop, a bowl, or even a whole pint of ice cream during the hot summer months. That’s why it’s no surprise that July is National Ice Cream Month and why I’ve been sharing easy ice cream recipes with you on our Facebook page all month long, like this Quick and Easy Pie!

Luckily for us, there’s so many varieties of ice cream available in our freezer case that’s it’s impossible to get bored of the stuff. I’m not just talking flavors either, I’m also talking ice cream cones, ice cream sandwiches, ice cream cakes, ice cream popsicles, etc., etc. In short, the freezer case at your grocery store is basically THE ULTIMATE ICE CREAM SHOP.

But even with The Ultimate Ice Cream Shop at my disposal, I still like to get a little creative in the kitchen and make my own ice cream treats. So, in honor of everything that is ice cream and deliciousness, I thought I’d show you this Easy Ice Cream Sandwich Cake I whipped up in the Test Kitchen this week.

First, you’ll need to get your ingredients: thick ice cream sandwiches, a pint of ice cream (I used strawberry chocolate chip, but you can use your favorite flavor), chocolate covered banana pieces, and chocolate ice cream topping.

Note: My picture shows a whole chocolate covered banana, but I found out right after I started making my cake that chocolate banana pieces are available, and used those instead. You can use the whole chocolate banana, but be careful with the wooden stick!

Then, line a loaf pan with some aluminum foil, making sure to make it long enough to hang over the edges. Doing this will make it easy to take your ice cream cake out when it’s ready.

Next, put in your first layer of ice cream sandwiches. You may need to cut a few to make them fit. It doesn’t have to be perfect, but you want to make them as snug as possible!

Then, you’ll spread a layer of ice cream on top. It’s okay if you have to soften your ice cream a little bit so that it’s easy to spread ‘cause it’ll harden up once you freeze your cake!

After that, you repeat another layer of ice cream sandwiches and strawberry ice cream, and pop it into the freezer for at least 4 hours, or overnight. When your layers have hardened together, it’s time to take it out of the loaf pan. All you have to do is invert the pan onto your serving plate and peel off the foil.

Your ice cream cake will look something like this:

Okay, so I know it doesn’t look beautiful yet, but just wait to see what happens when you frost it with frozen whipped topping, and garnish it with chocolate covered banana pieces and sliced strawberries. It’ll look like something you bought at the store!

Now all that’s left to do is: slice, drizzle the chocolate ice cream topping, and enjoy!
