Hi Mr. Foodies, I’m Victoria! When I’m not taking pictures of all the delicious recipes we cook-up here in the Test Kitchen, I enjoy working out, pretty much any outdoor or creative activity, and cooking. I’m a professionally ranked powerlifter with a passion for nutrition and wellness. You can usually find me in the gym pursuing personal, regional, and world records or in the kitchen pursuing new ways to make healthy, tasty meals.
How often do I cook? I cook easy, nutritious, go-to meals every day. I do most of my cooking on the weekend – meal prep for the week and special dinners we don’t have time for on weekdays.
Who am I cooking for? Technically, I cook for two: myself and my boyfriend who is also a powerlifter. We cook and eat enough food for a small village, though.
How long have I been cooking? I’ve been cooking for as long as I can remember. I was always my mom’s little sous chef.
My biggest challenge in the kitchen: Finding recipes that scale well price and simplicity-wise for the volume of meal prep we do every week – about 25 meals between 2 people.
What profession best describes me in the kitchen? I fancy myself an alchemist in the kitchen. I’m always experimenting with alternative ingredients to make recipes more healthy and protein-packed… especially desserts!
The kitchen appliance I couldn’t live without: I’m not much of a gadget girl when it comes to kitchen tools, but I’d be at a total loss without my knives. I have a set of Japanese knives I call my samurai swords, as well as Henckel the Smasher/Squasher… a big German knife I use almost exclusively for smashing garlic and breaking down tough squash.
My ultimate meal: Anything seafood, shellfish especially.
The one food I can’t stand: Anchovies and sardines.
The food that instantly takes me back to childhood is: Corn dogs with a bunch of yellow mustard. They remind me of going to the county fair when I was little.
If I were a spice, I would be: Cloves: strong, earthy, and a bit nutty.
My favorite food that grows from the earth is: Avocados, mangos, and passion fruit.
If I could have dinner with anyone in the world, dead or alive, it would be? Anthony Bourdain
Sweet tooth, or salt-craver? What’s my weakness? Sweet tooth. I love peanut butter, coffee, and citrus flavored desserts. I’m a big sucker for anything pumpkin spice.
