National Dairy Month! – Healthy Party Dip Recipe

If you haven’t already heard, it’s National Dairy Month! As a longtime fan of everything dairy, you can bet I’m excited about getting the chance to “Discover the Cool Possibilities.” I mean, dairy is such a huge part of what we eat. From cheesy breakfast casseroles to creamy and decadent desserts, it’s hard not to have dairy in some form or another.  (And nowadays, there are lots of companies who make it possible for those who are lactose-intolerant to enjoy dairy products, too!)

Anyway, I’m a big fan of the traditional dairy stuff…y’know…the nachos smothered in shredded cheese or the creamy cheesecake with the buttery crust…

Tex Mex Dip and Double Strawberry Swirl Cheesecake

So, while I’ll be eating all this stuff all month long, I thought that for my first recipe I’d make something a little lighter that I could serve as a party appetizer! I made our Mediterranean Roasted Pepper Dip, which I got from our Everyday Diabetic Recipes site.

The recipe is super easy and uses non-fat Greek yogurt (hello, dairy!). It’s the yogurt that gives it its smooth and creamy base.

Of course, I left the can of chickpeas out of the photo!

The recipe is super easy and just calls for you to stick everything in a blender and process, but before I could do that, I had to chop up my basil. Now, I still consider myself a pretty novice-level cook, so I was glad when my friend stepped in to show me an easier way to chop up the basil leaves.

The trick is to stack the leaves and roll them up before you cut them.  If you put the biggest leaf on the bottom, it will hold all the little pieces inside.  You end up with slivers that are neat and pretty – so easy!

Then, I was able to blend everything up.

Don’t you love the colors of the red peppers and the green basil together?

The final result? A beautiful looking dish that was party ready! It went perfectly with fresh veggies and pita chips, and everyone was glad that there was something healthier to snack on. It was so good and easy to make that I made another batch to bring in to the office, so that I could share a real good-looking photo with all of you!
