This morning started off with a bowl of pumpkin spice oatmeal. Yesterday it was a pumpkin spice smoothie. The day before? A slice of pumpkin bread. This afternoon? A pumpkin dump cake and a slice (or two) of a Pumpkin Fudge Éclair Cake. Yes, I admit it, I am a proud member of the pumpkin craze. When the season for pumpkin-flavored everything rolls around, I make it my goal to try every new pumpkin-flavored thing that’s out there. It’s no easy task, but I make the sacrifice. I don’t know what happens between September and October that makes everyone go crazy for pumpkin. For me, it’s more of a year- round thing, but I’m thinking that somewhere around the end of September we’re just done with the fruity, citrusy tastes of summer, and we want something totally different. Pumpkin, being a totally fall fruit is exactly that. There’s also the argument that, for most Americans, pumpkins bring back some good old-fashioned feelings.
Anyway, we have a whole collection of pumpkin recipes on our site, a few of which I’ve had the chance to sample here at work, and a few of which I’ve only stared at for hours wondering when I’d get a chance to devour them. Luckily, we have a tradition here at the Mr. Food Test Kitchen, where someone else in the office makes you a dish to celebrate your birthday. Guess what? I’m an October baby.
Oh, I did mention something about a Pumpkin Fudge Éclair Cake earlier, didn’t I? I found this recipe from Inside BruCrew Life while browsing through Pinterest for a way to use the pumpkin spice instant pudding mix I picked up from the grocery store a couple of weeks ago. This recipe seemed easy enough, and looked a lot like our Chocolate Éclair Cake. Putting this cake together was a piece of…cake. The hardest part was not eating it all as soon as it was set. I mean, frozen whipped topping, creamy pudding, and chocolate graham crackers? Oh, and a fudgy chocolate spread? Sounds like Heaven is themed for fall. Honestly, I could eat pumpkin straight out of the can, which I often do.
