Bean Bread Spread

Try whipping up this one and you'll be doing some California dreamin' before you know it!

What You'll Need

  • 1 loaf Italian bread
  • 1/2 cup olive oil, plus extra for brushing on bread
  • 1 can (15 to 16 ounces) garbanzo beans (chick peas), drained
  • 3 to 5 garlic cloves, coarsely chopped (to taste)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/2 teaspoon chili powder
  • 1/4 cup coarsely chopped fresh parsley for garnish

What to Do

  1. Preheat the oven to 375°F.

  2. Slice the bread in half lengthwise, brush the cut side of each half with olive oil, and bake for about 20 minutes or until golden brown.

  3. Meanwhile, in a blender jar, place the 1/2 cup olive oil, garbanzo beans, garlic, lemon juice, salt, pepper, and chili powder, in that order. (It will blend better.) Purée, mixing frequently, until it becomes a paste.

  4. Spread the paste on the bread, garnish with the parsley, and slice into serving-sized pieces.

  5. Makes about 1-1/4 cups.
