Black Bean Fritters

So, you thought fritters had to be fried in lots of oil? Uh uh! You can cook 'em up just fine in a skillet with a little oil. And not only are we helping ourselves cut down on fat, but the black beans are full of good-for-us protein, too!

What You'll Need

  • 1 3/4 cup all-purpose flour
  • 2 teaspoon baking powder
  • 2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 egg whites, beaten
  • 1 cup salsa
  • 2 (16-ounce) cans black beans, rinsed and drained
  • 1 tablespoon canola or vegetable oil, plus extra if needed

What to Do

  1. In a large bowl, combine flour, baking powder, salt, and pepper. Add egg whites and salsa; mix well then stir in black beans.
     
  2. Place 1/2 teaspoon oil in a large skillet and heat to medium-high heat. Pour 1 teaspoon batter per fritter into skillet, cooking several fritters at one time, but not overcrowding them. Cook 1 minute then flip fritters and flatten with a spatula; cook 1 to 2 more minutes, or until browned on both sides. Repeat with remaining batter, adding more oil as necessary.
     

Makes about 5 dozen fritters.

 

Note

Serve with additional salsa and reduced-fat sour cream for dipping, if desired.
