Casino Clam Bake

I love visiting friends who live by the ocean and make me clams casino with fresh clams. They're yummy, but they take hours to make...and what a mess! I came up with a shortcut version that's a super appetizer when company drops in.

What You'll Need

  • 3 (6-1/2-ounce) cans chopped clams, drained
  • 2 (4-ounce) cans mushroom stems and pieces, drained
  • 1 medium-sized red bell pepper, chopped
  • 1 medium-sized red onion, chopped
  • 4 ounce bacon
  • 3/4 cup unflavored dry bread crumbs

What to Do

  1. Preheat oven to 400 degree F.
     
  2. In a small bowl, combine clams and mushrooms, and pour evenly over bottom of a 9-inch pie plate.
     
  3. Process peppers, onions, bacon, and bread crumbs in a food processor until smooth. Spread evenly over clams and mushrooms. Bake  20 to 25 minutes, or until hot throughout and golden.
