Mushroom Cheddar Croquettes

Croquettes make a perfect appetizer for any meal, and this Mushroom Cheddar Croquette recipe is fancy enough for holidays yet easy enough to make on a weeknight! Before you know it, your whole table will be asking for seconds.

What You'll Need

  • 1 pound sliced fresh white mushrooms
  • 1 scallion, thinly sliced
  • 1 cup shredded Cheddar cheese
  • 1 1/2 cup dry bread crumbs
  • 1 egg
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • Vegetable oil for frying

What to Do

  1. In a large bowl, combine all ingredients except oil; mix well. Shape into 8 equal-sized patties by squeezing mixture together.
  2. Heat 1/2 inch oil in a large skillet over medium-high heat and cook croquettes for about 15 minutes, or until browned on both sides.
  3. Drain on a paper towel-lined platter.
