Pass the Pate

At one time, chopped chicken liver was considered a very ethnic dish. These days, the trendy variation is called p^té and our Pass The Pate is a great spread for passing around at your next gathering.

What You'll Need

  • 1 tablespoon butter
  • 1 pound chicken livers
  • 1 small onion, chopped
  • 3 hard-boiled eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground red pepper
  • 1/4 cup heavy cream

What to Do

  1. Melt the butter in a medium skillet over medium-high heat. Add the chicken livers and onion and sauté for 8 to 10 minutes, or until cooked through.

  2. Allow to cool slightly then place in a food processor that has been fitted with its metal cutting blade; add the hard-boiled eggs, ground red pepper, and salt and process until smooth.

  3. While processing, pour the cream slowly through the feeder tube until the mixture is smooth.

  4. Transfer to a serving bowl, cover, and chill for at least 2 hours before serving.
             Makes about 2-1/4 cups.

Notes

What a perfect dish to prepare ahead of time! Sprinkle it with some chopped parsley and serve with crackers.
