Golden Pecan Raisin Bars

A nice change from all the rich chocolatey bars and cookies.

What You'll Need

  • 1 1/4 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup (1 stick) butter, softened
  • 2 eggs
  • 1/2 cup firmly packed brown sugar
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon baking soda
  • 1 cup chopped pecans
  • 1 cup golden raisins
  • 1/2 cup flaked coconut

What to Do

  1. Preheat oven to 350 degrees F.
     
  2. In a medium-sized bowl, combine flour and sugar. Using a fork, cut in butter until mixture resembles a fine meal. Press mixture into a greased 8-inch square baking dish. Bake 20 minutes or until edges are golden.
     
  3. In a large bowl, beat together eggs, brown sugar, and vanilla. Stir in remaining ingredients. Evenly spread batter over warm crust and bake an additional 20 to 25 minutes or until set. Cool pan on a wire rack and cut into bars when cool.

Notes

We're going for a light look here, but if you don't have golden raisins, it's okay to use dark raisins instead.
