Favorite Filets

Restaurants call this tournedos of beef or filet mignon. Actually, it doesn't matter what you call it 'cause, once they taste it, your gang will call it their Favorite Filets.

What You'll Need

  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 (6- to 8-ounce) 1-1/4-inch beef filet mignon steaks
  • 4 strips bacon

What to Do

  1. Sprinkle salt and pepper evenly over steaks. In a large skillet, lightly cook bacon over medium-high heat, but do not let it get crisp. Leave bacon and drippings in skillet.
     
  2. In the same skillet, saute steaks over medium-high heat 4 to 5 minutes per side for medium-rare, or until desired doneness.
     
  3. When bacon is crisp and browned, place a slice over each steak.
     
  4. Remove steaks from pan and drain on paper towels before serving.

     

Note

A dollop of Shortcut Bearnaise Sauce will complete your dish with all the tastes you'd get at a four-star restaurant.
