Flank Steak with Tomato Olive Relish

Convenient canned tomatoes and briny black olives come together in a snap for this delicious relish. Over budget-friendly flank steak, this is sure to become a new favorite meal for your family.

What You'll Need

  • 1 1/2 pound flank steak
  • 3/4 teaspoon salt
  • 3/4 teaspoon coarsely ground pepper
  • 3 tablespoon olive oil
  • 2 cloves garlic, thinly sliced
  • 1/2 cup red wine or chicken broth
  • 2 (14-1/2-ounce) can Italian-style diced tomatoes
  • 1/2 cup pitted oil-cured black olives, chopped
  • 1 tablespoon balsamic vinegar
  • 3 tablespoon minced fresh parsley or 1 tablespoon dried parsley

What to Do

  1. Sprinkle flank steak evenly with salt and pepper. Heat oil in a large skillet over medium-high heat. Add steak, and cook 8 to 9 minutes on each side or to desired degree of doneness.

  2. Drain, reserving 1 tablespoon drippings in skillet; add garlic, and saut 1 minute. Add wine, tomatoes, olives, and vinegar; cook 10 minutes or until reduced by half. Stir in parsley.

  3. Cut steak diagonally across grain into thin slices, and serve with tomato relish.

Notes

This relish goes great with flank steak, but it'll compliment chicken or pork just as well.
