Foolproof Pot Roast

Talk about convenience! This savory main dish starts with a fully cooked pot roast (found in most supermarkets) and is doctored with just a few basic ingredients. And it's ready in less than 20 minutes...my idea of home-cooked goodness!

What You'll Need

  • 1 (16-ounce) package fully cooked beef pot roast in gravy
  • Nonstick cooking spray
  • 1 large onion, thinly sliced
  • 1 tablespoon light stick butter
  • 1/2 teaspoon sugar
  • 1 teaspoon balsamic vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

What to Do

  1. Heat roast according to package directions. Remove roast from package, reserving liquid. Let stand 2 minutes. Cut into 8 pieces.
     
  2. Coat a large nonstick skillet with nonstick cooking spray; place over medium-high heat until hot. Add onion, and saute 10 minutes or until browned.
     
  3. Add reserved liquid, roast, butter, and remaining ingredients to pan. Stir well, and bring to a boil. Boil 30 seconds or until thoroughly heated.
