What You'll Need

  • 1 (1-pound) flank steak
  • 1 tablespoon ground cumin
  • 1 tablespoon chili powder
  • 1/2 teaspoon garlic powder
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 4 (8-inch) flour tortillas
  • 1 1/2 cup thinly sliced green, red, or yellow bell pepper
  • 2 small onions, sliced
  • 1 tablespoon vegetable oil
  • 1 tablespoon lime juice
  • 1/2 cup salsa verde (tomatillo salsa) or salsa
  • 1/4 cup sour cream

What to Do

  1. Cut steak diagonally across grain into thin strips. Combine cumin and next 4 ingredients in a large heavy-duty, zip-top plastic bag; add steak. Seal and shake to coat.

  2. Heat tortillas according to package directions; keep warm.

  3. Remove steak from plastic bag, discarding seasoning mixture. Cook steak, pepper slices, and onions in hot oil in a large skillet 6 minutes, stirring constantly, or until steak is done. Remove from heat; stir in lime juice.

  4. Spoon meat mixture evenly down center of tortillas, and fold up. Serve with salsa verde and sour cream.
