Hot Beef 'n' Pepper Sandwiches

This is a great way to make a meal from leftover roast beef. But if roast beef isn't on your menu this week, pick up 1/2 pound from your deli.

What You'll Need

  • 1 tablespoon olive oil
  • 1/2 pound thinly sliced lean roast beef, cut into strips
  • 1 large red bell pepper, thinly sliced
  • 1 large green bell pepper, thinly sliced
  • 1 large onion, thinly sliced
  • 4 steak or hoagie rolls, split and warmed

What to Do

  1. Heat olive oil in a large nonstick skillet over medium-high heat until hot. Add roast beef, peppers, and onion; saute until meat is hot and onion is tender.

  2. Spoon beef mixture evenly onto bottom halves of rolls, and top with remaining roll halves.
