Peanut Butter Chocolate Chip Muffins

What You'll Need

  • 1/2 cup peanut butter
  • 2 eggs
  • 1 cup milk
  • 2 tablespoon butter, melted
  • 2 ripe bananas, mashed
  • 2 cup biscuit and baking mix
  • 1 cup sugar
  • 3/4 cup chocolate chips

What to Do

  1. Preheat oven to 350 degrees F. Coat muffin cups with paper liners.
     
  2. In a large bowl with an electric mixer, beat peanut butter and eggs. Add milk, butter, and bananas and continue beating until well combined. Add baking mix and sugar; beat until just moistened. Stir in chocolate chips. Spoon evenly into muffin cups.
     
  3. Bake 20 to 22 minutes or until a toothpick comes out clean.
     
  4. Serve warm or allow to cool slightly, then remove to a wire rack to cool completely.
