Simple Chicken Fricassee

Did you know that fricassee is the French term for a thick, chunky, stew-like dinner of browned chicken or meat that's simmered with vegetables? Our version delivers that great flavor and convenience in a one-dish meal - fast!

What You'll Need

  • 1/4 cup all-purpose flour
  • 6 skinned and boned chicken breasts
  • 1/4 cup butter, divided
  • 2 cup sliced fresh mushrooms
  • 3 carrots, sliced
  • 1 (1-ounce) envelope herb-with-lemon soup mix
  • 1 cup half-and-half
  • 1/2 cup water or white wine
  • 2 teaspoon chicken bouillon granules or 2 chicken bouillon cubes

What to Do

  1. Place flour in a shallow dish; dredge chicken in flour. Melt 2 tablespoons butter in a large skillet over medium heat; brown chicken in butter. Remove from skillet, and set aside.

  2. Melt remaining 2 tablespoons butter in skillet. Add mushrooms and carrots; cook over medium heat, stirring constantly, 4 minutes or until tender.

  3. Combine soup mix and remaining ingredients in a medium bowl; pour over mushroom mixture. Bring to a boil, stirring constantly. Add chicken; reduce heat, and simmer 10 minutes or until chicken is done.
