Mojo Chicken

Mojo is a marinade that is commonly used in Spanish and Caribbean cooking. In our recipe for Mojo Chicken we combine ingredients like garlic, onions, and citrus juice to create a flavorful, Cuban-inspired chicken dish that tastes phenomenal!

What You'll Need

  • 3/4 cup grapefruit juice
  • 3/4 cup orange juice
  • 1/2 cup white vinegar
  • 1 tablespoon lemon juice
  • 1/2 a medium-sized onion, chopped
  • 2 tablespoon minced garlic
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried cilantro
  • 2 teaspoon salt
  • 6 boneless, skinless chicken breast halves (1 to 2 pounds total)

What to Do

  1. In a blender, combine all the ingredients except the chicken; blend until smooth. Reserve 1 cup of the mixture and chill.

  2. Place the chicken in a large glass dish and pour the remaining juice mixture over the top. Cover and marinate in the refrigerator for 2 to 3 hours. Remove the chicken from the marinade, discarding excess marinade, and cook in a large skillet over medium-high heat for 12 to 14 minutes, or until no pink remains and the juices run clear, turning halfway through the cooking.

  3. Meanwhile, in a small saucepan, cook the reserved 1 cup chilled marinade over medium-high heat for 3 to 4 minutes, or until boiling. Remove from the heat and pour over the cooked chicken. Serve immediately.
