Polynesian Chicken

After a stressful day, don't you want something that'll transport you to a faraway place? How about a trip to the tropics? Dig into this dish and you're there!

What You'll Need

  • 1 1/2 pound boneless, skinless chicken breasts, cut into 1-inch chunks
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 tablespoon vegetable oil
  • 1 1/2 cup sweet-and-sour sauce
  • 1 (8-ounce) can pineapple chunks, drained
  • 2 bell peppers (1 each red and green), cut into 1-inch chunks
  • 1/2 cup maraschino cherries, drained

What to Do

  1. Season the chicken with the salt and pepper.

  2. Heat the oil in a large skillet over high heat. Cook the chicken for 8 to 10 minutes, or until no pink remains, stirring occasionally. Reduce the heat to medium-low and add the remaining ingredients; mix well. Cook for 3 to 5 minutes, or until heated through. Serve immediately.

Notes

A big pot of quick-cooking brown rice will team up perfectly with this. And what do you say to a piña colada to wash it all down?
