Saucy Chicken

Grandma used to spend all day in the kitchen preparing this savory dish. With a few shortcuts, we can have the same taste with a lot less work.

What You'll Need

  • 2 tablespoon vegetable oil
  • 2 tablespoon butter
  • 1 small onion, finely chopped
  • 6 boneless, skinless chicken breast halves (1-1/2 to 2 pounds total)
  • 1/4 cup white vinegar
  • 1/4 cup ketchup
  • 3 tablespoon sugar
  • 1/4 teaspoon hot pepper sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

What to Do

  1. Heat the oil and melt the butter in a large skillet over medium heat. Add the onion and chicken and brown the chicken for 3 to 4 minutes per side.

  2. In a small bowl, combine the remaining ingredients; mix well and add to the skillet.

  3. Reduce the heat to low, cover, and simmer for 20 minutes.

  4. Uncover and cook for 5 to 10 more minutes, or until the sauce has thickened and the chicken is no longer pink.

Notes

If your barbecue grill is available, you may want to cook this outside - just make the sauce as above, marinate the chicken in the sauce mixture, then grill it for 6 to 7 minutes per side, or until no pink remains in the chicken.
