Nice Spice Cookies

These are perfect for sharing with that special someone in front of the fireplace on a cold winter's night.
What You'll Need
- 3/4 cup vegetable shortening
- 1 cup sugar
- 1 egg
- 1/4 cup light molasses
- 2 cups all-purpose flour
- 2 teaspoons baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 3/4 teaspoon ground ginger
What to Do
- Preheat the oven to 375 degree F.
- In a large bowl, cream the shortening, sugar, egg, and molasses until light and fluffy.
- In another large bowl, combine the remaining ingredients. Add the flour mixture to the shortening mixture, mixing well. Form into 1-inch balls and place 2 inches apart on cookie sheets that have been coated with nonstick cooking spray. Bake for 10 to 12 minutes or until golden.
- Cool slightly then remove to a wire rack to cool completely.
Makes 2-1/2 to 3 dozen cookies.
Notes
Don't be afraid to cut down on any of the spices if you prefer them less spicy.
