Cheesy Baked Flounder

What You'll Need

  • 1/4 cup vegetable oil
  • 1 cup cornflake crumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon salt, divided
  • 1/2 teaspoon black pepper, divided
  • 6 flounder fillets (about 2 pounds total)
  • Nonstick cooking spray

What to Do

  1. Preheat the oven to 400 degree F. Place the oil in a shallow dish. In another shallow dish, combine the cornflake crumbs, cheese, 1/4 teaspoon salt, and 1/4 teaspoon pepper; mix well.

  2. Season the flounder fillets with the remaining 1/4 teaspoon salt and 1/4 teaspoon pepper. Dip the seasoned fillets in the oil then in the crumb mixture, coating completely. Place on large rimmed baking sheets that have been coated with nonstick cooking spray.

  3. Lightly coat the top of the fillets with nonstick cooking spray and bake for 12 to 15 minutes, or until the coating is golden and the fish flakes easily with a fork. Serve immediately.

Notes

You can buy cornflake crumbs or make your own by crushing cornflakes very fine.
