Crispy Catfish and Waffles

Move over chicken, there’s a new way to take your waffles over the top. We promise that once you taste our Crispy Catfish and Waffles, you’ll be hooked. Serve it up with some fresh peach slices, drizzle on some syrup, and get ready for some good eatin’.

What You'll Need

  • 1 cup milk
  • 1 egg
  • 2 teaspoon hot sauce
  • 3/4 cup cornmeal
  • 1/2 cup flour
  • cup flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup vegetable oil
  • 4 fillets (about 1-1/4-pounds total) U.S. Farm-Raised Catfish, each cut into 4 strips
  • 6 frozen or homemade waffles
  • 1 to 2 fresh peaches, sliced into thin wedges
  • Maple syrup for drizzling

What to Do

  1. In a shallow dish, whisk milk, egg, and hot sauce. In another shallow dish, combine cornmeal, flour, salt, and pepper; mix well. In a large deep skillet or cast iron skillet, heat oil over medium heat until hot.
     
  2. Dip fish strips in egg mixture, then in cornmeal mixture, coating evenly on all sides. Dip a second time in egg mixture and cornmeal. (This will give you a crispy coating.)
  3. Cook fish, in batches, 3 to 4 minutes per side, or until golden and fish is firm in center and flakes easily with a fork. Drain on a wire rack placed on top of a baking sheet. 
  4. Toast waffles and top with catfish strips, peach slices and a drizzle of maple syrup. Serve immediately.
     

Test Kitchen Tip

If you want, you can air fry these, rather than pan frying them. All you have to do, after breading them, is to spray the coating with cooking spray and air fry until cooked through.
