Nutty Grilled Flounder

Awesome...that's the word that came to my lips after I first tasted this nutty grilled concoction. What do you think?

What You'll Need

  • 2 cup finely chopped walnuts
  • 1 teaspoon salt
  • 1/2 teaspoon cayenne pepper
  • 1 to 1½ pounds flounder fillets
  • 1/4 cup ( stick) melted butter or margarine

What to Do

  1. Preheat the grill to medium-high heat.

  2. In a medium-sized bowl, combine the walnuts, salt, and cayenne pepper; mix well.

  3. Rinse the fish with cold water and pat dry with a paper towel.

  4. Place the melted butter in a small bowl; dip the flounder into the butter, then the nut mixture, completely coating the fish. Place the coated fish in a hinged grill basket that has been coated with nonstick vegetable spray.

  5. Grill the fish for 5 to 7 minutes, until the fish flakes easily with a fork and is cooked through, turning occasionally.

Notes

You can "fancy" this up by using pecans instead of walnuts...or maybe you'd prefer almonds or peanuts? Whatever's your fancy!
