Onion-Baked Catfish

Looking for a new and exciting fish dish? Here's one that's sure to be a pleaser.

What You'll Need

  • 6 farm-raised catfish fillets (about 2 pounds), thawed if frozen
  • 1 cup (8 ounces) sour cream
  • 1 cup mayonnaise
  • 1 package (1 ounce) ranch-style salad dressing mix
  • 2 cans (2.8 ounces each) French-fried onion rings
  • 1 lemon or lime, cut into wedges or slices for garnish
  • Parsley, watercress, or dill sprigs for garnish

What to Do

  1. Preheat oven to 350 degrees F.
     
  2. Combine the sour cream, mayonnaise, and salad dressing mix in a small bowl. Pour 3/4 cup of mixture into a shallow dish.
     
  3. Process the onion rings in a blender or food processor until finely crushed and put on a plate. Dip fillets in sour cream mixture, then in crushed onion rings to coat. Place fish in an ungreased 9 x 13-inch baking dish.
     
  4. Bake for 20 to 25 minutes or until fish flakes easily with a fork.
     
  5. Remove fillets to a warm serving platter. Garnish as desired with lemon or lime slices and greens Serve with remaining sour cream mixture.
     

Notes

Onion rings may be placed in a plastic bag and crushed with a rolling pin instead of using a blender or food processor. Equal amounts of low-fat sour cream and light mayonnaise may be substituted, if desired. If catfish fillets are not available, any white-fleshed fish will work (try cod, haddock, sole, flounder, or perch).
