Short and Simple Pesto Fish

This should get your attention: only three ingredients! And it's what I call a restaurant-fancy meal without the hefty price tag. Hooray!

What You'll Need

  • 2 (15-ounce) cans sliced potatoes, drained
  • 1 (7-ounce) container prepared pesto
  • 4 flounder fillets (about 1½ pounds total)

What to Do

  1. Preheat the oven to 350 degree F. In a medium-sized bowl, combine the potatoes and half of the pesto sauce; toss until evenly coated.

  2. Place the mixture in a 9" x 13" baking dish that has been coated with nonstick cooking spray. Place the flounder over the potatoes and spread the remaining pesto sauce evenly over the fish, covering completely.

  3. Bake for 15 to 20 minutes, or until the fish flakes easily with a fork. Serve immediately.

Notes

Since flounder fillets vary in thickness, you may get more than 4 fillets when buying 11/2 pounds. Make sure to adjust the cooking time according to the thickness of the fish. Watch it carefully and allow the fish to cook until it flakes easily with a fork.
