Peaches and Almond Cream

If you're a peach lover, like we are, you're in for quite a treat. Maybe you should make a double batch, since this seems to be a favorite of just about everybody!

What You'll Need

  • 1/2 cup milk
  • 2 tablespoon sugar
  • 1 1/2 teaspoon cornstarch
  • 3/4 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1/2 cup heavy cream
  • 4 fresh peaches, pitted and cut into wedges (see Note)

What to Do

  1. In a small saucepan, combine milk, sugar, and cornstarch over medium-high heat. Bring to a boil, then reduce heat to low and simmer until thickened. Remove from heat and allow to cool completely, then add vanilla and almond extracts.
     
  2. In a medium-sized bowl, with an electric beater on medium speed, beat cream 4 to 6 minutes, until stiff peaks form. Fold milk mixture into cream. Place cut peaches in 4 individual dessert dishes or a large serving bowl and top with cream sauce.
     
  3. Chill at least 1 hour before serving.
     

Notes

If fresh peaches aren't in season, well-drained canned peaches can certainly be substituted.
