What You'll Need

  • 4 refrigerated, full cooked turkey sausage patties
  • 3 tablespoon butter
  • 1 cup fresh spinach
  • 4 frozen whole wheat waffles
  • 5 eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tomato, sliced
  • 1/4 cup shredded mozzarella cheese

What to Do

  1. In a large skillet over medium heat, cook sausage, covered, 6 to 8 minutes or until browned and heated through, turning once halfway through cooking. Remove to a plate and cover to keep warm.
  2. In the same skillet over medium heat, melt butter. Add spinach and cook 1 minute or until spinach is wilted. Meanwhile, toast waffles according to package directions.
  3. In a medium bowl, whisk together eggs, salt, and pepper; add to spinach mixture. Stir occasionally, until eggs are set.
  4. Top waffles evenly with tomato, scrambled eggs, sausage patty, and cheese. Serve immediately.
