Old Time Diner Gelatin Parfaits

This tasty dessert is a one-of-a-kind treat that every diner patron would wait until the end of their meal to order. That way, they could finish with a delicious sweet treat. Old Time Diner Parfaits are just that!

What You'll Need

  • 1 (4-serving size) package cherry-flavored gelatin, mixed according to the package directions
  • 1 (4-serving size) package lime-flavored gelatin
  • 1 cup boiling water
  • 1 1/2 cup ice cubes, divided
  • 1/2 cup sour cream
  • 1 (8 ounce) can pineapple tidbits, drained
  • 1 (5.5 ounce) can apricot nectar
  • 1 (4-serving size) package orange- or peach-flavored gelatin

What to Do

  1. Pour mixed cherry gelatin equally into 8 large parfait glasses. Chill 2 hours, or until set.
     
  2. In a large bowl, dissolve lime gelatin in boiling water. Add 1/2 cup ice cubes and mix until cubes are melted and gelatin is slightly thickened. With an electric beater on low speed, beat in sour cream. Fold in pineapple tidbits and layer evenly over cherry gelatin. Chill for 2 hours or until set.
     
  3. In a small saucepan, bring apricot nectar to a boil over medium-high heat.
     
  4. In a medium-sized bowl, dissolve orange or peach gelatin in boiling apricot nectar. Add remaining 1 cup ice cubes and stir until melted. Spoon over lime gelatin layer in each parfait glass, then cover and chill at least 3 hours, or until firm.

Notes

For a fruit-packed parfait, add drained canned apricot halves to the final layer.
