Sweet Potato Surprise

If you keep it between us, I'll tell you the surprise. It's how easy it is to make this surprisingly yummy treat!

What You'll Need

  • 1 1/4 cup self-rising flour
  • 2/3 cup chopped pecans, divided
  • 1 cup (2 sticks) unsalted butter, melted, divided
  • 1 (16-ounce) container frozen whipped topping, thawed
  • 1 (8-ounce) package cream cheese, softened
  • 3/4 cup sugar
  • 2 (29-ounce) cans sweet potatoes, mashed and drained
  • 1 1/2 teaspoon vanilla extract

What to Do

  1. Preheat oven to 350 degrees F.
     
  2. In a medium bowl, combine the flour, 1/3 cup pecans, and 1/2 cup melted butter; mix well. Spread into the bottom of a 9- x 13-inch baking dish, forming a crust.

  3. Bake 15 to 18 minutes, or until lightly browned. Cool to room temperature.
     
  4. Reserve 1-1/2 cups of the whipped topping; set aside. In a medium bowl, combine the remaining whipped topping, the cream cheese, and sugar; mix well.
     
  5. In another medium bowl, combine the sweet potatoes, the remaining melted butter, and the vanilla; mix well. Layer the cream cheese mixture over the cooled crust, then spread the potato mixture over the top. Spread the reserved whipped topping over the potatoes and sprinkle with the remaining 1/3 cup pecans. Cover and chill at least 2 hours before serving.

Notes

If you prefer, you can substitute walnuts for the pecans.
