Black Bean Salad

This easy salad recipe is dressed with a homemade lemon drizzle and packs an extra boost of protein. Serve this Black Bean Salad as a dinner side dish or grab a big bowl and throw some chopped chicken in. Either way, it's a refreshing recipe!

What You'll Need

  • 1 head of iceberg lettuce, shredded (8 cups)
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 red bell pepper, chopped (about 3/4 cup)
  • 1 small onion, chopped (about cup)
  • 1/3 cup olive oil
  • 2 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 2 tablespoon chopped fresh parsley
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

What to Do

  1. In a large bowl, combine all of ingredients; mix well.
     
  2. Serve immediately or cover and chill until ready to use.
