Paella Salad

A little Spanish, a little Mexican...and a lot of taste!

What You'll Need

  • 1 package (10 ounces) yellow rice
  • 2 tablespoon red wine vinegar
  • 1/3 cup vegetable oil
  • 1/8 teaspoon dry mustard
  • 1 large tomato, chopped
  • 1/2 cup finely chopped onion
  • 1/2 a medium-sized red bell pepper, chopped
  • 1 1/2 teaspoon salt
  • 1 package (10 ounces) frozen cooked shrimp, thawed

What to Do

  1. Cook the rice according to the package directions; set aside to cool.

  2. In a large bowl, combine the remaining ingredients except the shrimp; mix well.

  3. Add the cooled rice and shrimp; toss to coat well. Cover and chill for at least 2 hours before serving.

Notes

For additional color and flavor, add a thawed 10-ounce package of frozen peas to the salad when tossing.
