Shrimp Cocktail Salad

Entertaining on the patio, by the pool, or in the backyard? I've got just the side salad for you -- or is it a main course? Hmm...

What You'll Need

  • 1 medium-sized head of iceberg lettuce, thinly sliced (about 8 cups)
  • 2 cans (4.25 ounces each) shrimp, drained
  • 3/4 cup cocktail sauce

What to Do

  1. In a large bowl, combine the lettuce, shrimp, and cocktail sauce. Toss until the lettuce and shrimp are evenly coated.

  2. Serve immediately or cover and refrigerate until ready to use.

Notes

Serve each portion on a plate or in a stemmed glass, maybe with a lemon wedge.
