Another all-time favorite made simple, and more "today style" ... you'll love it!

What You'll Need

  • 1 pint heavy cream
  • 4 ounce (1 stick) butter
  • 6 ounce soft processed Gruyere cheese, like Laughing Cow or Bon Bel
  • 1 pound fettuccine
  • 1 (16 ounce) package frozen cauliflower, broccoli, and carrot combination, thawed and blanched
  • 1/2 cup grated Parmesan cheese

What to Do

  1. In a medium-sized saucepan or in a double boiler, combine heavy cream, butter and soft Gruyere cheese. Cook over a low heat until everything is melted and sauce is velvety smooth, about 20 minutes.

  2. Meanwhile, in a large pot of boiling, salted water, cook fettuccine to desired doneness; drain and place in a large bowl.

  3. Mix in vegetables and sauce, and sprinkle with Parmesan cheese. Serve immediately.

Notes

Note: You may want to try a lower-fat version of this recipe by using low-fat processed Gruyere cheese.
